Melissa's....Famous Bran Muffins!

I have had a special request for this week's post so here goes! This recipe makes a ton so I usually make it all and then freeze them. That way you have a quick and easy breakfast! I also skip the nuts and raisins! Oh, I usually only get 2-3 dozen as well.

Bran Muffins

2 cups boiling water
5 tsp. baking soda

Add soda to hot water and set aside to cool

1 cup shortening
2 cups sugar
4 eggs
4 cups all bran
2 cups bran flakes
1 tsp salt
1 qt buttermilk
5 cups flour
1 cup nuts (optional)
2 cups raisins (optional)

Cream together shortening, sugar, and eggs, then add water-soda mixture to it. Add remaining ingredients. Store batter in regrigerator for 3-6 weeks if you don't want to make all of them (I usually bake them all and then put them in the freezer in zip lock bags and pull them out as needed). Makes approximately 6 dozen total.

When baking, bake at 375 degrees for 20 -30 minutes.

  3. Are there any suggestions for subing out the shortening or buttermilk? They sound yummy.
